Cardoon: Artichoke's Italian Cousin: "Why are your artichokes wrapped in blankets?" We reply that they are not artichokes, but cardoons, which are in the same plant family. The difference is that the stalks are what you harvest from the cardoon plant, while the thistle (flower bud) is what the artichoke is grown for. To ensure they are tender, and not fibrous or stringy, we blanch the cardoons in the garden, which means blocking sunlight from the stalks so they end up white rather than green.
