Squash Tennessee Sweet Potato

20 seeds. 100 days. Cucurbita mixta/Cucurbita argyrosperma. Annual.

 

Squash 'Tennessee Sweet Potato' has white fruits with light green stripes. Its cream colored flesh has a light flavor that is somewhat sweet. It kind of tastes like a zucchini with the texture of a winter squash. In cooking, this squash carries the flavors you add to it. We found that this squash works best blended up and made into to savory dishes like curry squash soup or added to mashed potatoes.

 

It grows well in areas with a long warm season. Tennessee Sweet Potato squash will not cross with your curcubita pepo, maxima or mochata varieties.  Also known as Green Striped Bell and Virginia Sweet Potato.

 

This squash really shines in it's long term storage potential because of it's hard and dry rind. We harvested our squash in October and enjoyed them in June. That is almost 8 months in our cool basement!

 

Sowing Squash Seeds:

 

Sow seeds in hills 1 inch deep after the last frost date.  Space hills 4–6 feet apart. Thinned to 2 plants per hill. Full sun.
