Salsify 'Mammoth Sandwich Island'
Easy to grow, gorgeous in the garden and extremely versatile in the kitchen. This rough looking white root vegetable is wonderful baked, steamed or used in a gratin. Also known as oyster vegetable as its subtle sweetness has hints of shellfish flavour.
How to grow
Like carrots and parsnips, salsify likes deep, loose soil. Avoid adding manure as this causes the roots to fork. Keep moist during the growing season.
