GROW:About an hour or two before you plan to sow, soak the seeds in warm water. Then fill each cell or peat pot with soil and make a divot the size of your finger down to the first knuckle, or about one inch deep.Drop one seed in each cell, or two if you’re worried about germination rates.
EDIBLE:The leaf stalks can be used raw, when they have a crisp texture, but are most commonly cooked with sugar and used in pies, crumbles and other desserts. They have a strong, tart taste.
WHEN TO PLANT:Rhubarb can be planted in late fall or in early spring.
ATTENTION:The leaves contain toxins, including oxalic acid, and are not eaten.
Rhubarb, (Rheum rhabarbarum), also called pieplant, a hardy perennial of the smartweed family (Polygonaceae) native to Asia and grown for its large edible petioles (leafstalks). Rhubarb is commonly grown in cool areas of the temperate zones. The plant’s fleshy, tart, and highly acidic leafstalks are used in pies, often with strawberries, in compotes and preserves, and sometimes as the base of a wine or an aperitif. Rhubarb produces large clumps of enormous leaves, up to 60 cm (2 feet) across. The leaves are borne on proportionately large petioles, which are 25 mm (1 inch) or more in diameter and up to 60 cm in length and arise from an underground stem. The leaves appear early in the spring. Later in the season a large central flower stalk may appear and bear numerous small greenish white flowers and angular winged fruits containing one seed. The roots withstand cold well, although the tops die back in autumn. What’s wonderful about rhubarb is that it’s a perennial: It will produce for many years, five or more. For that reason, rhubarb should be planted in its own space in any corner of the garden where it can grow undisturbed. Rhubarb grows well in soil amended with plenty of well-rotted manure or compost; this has inspired some gardeners to just go ahead and plant it near their compost piles! With its ruby or green stems and umbrella-like leaves, rhubarb also adds height and structure to your garden along with a splash of gorgeous color that will return year in and year out.
