Effect of Variety and Plant Protection Method on Chemical Composition and in Vitro Digestibility of Faba Bean (Vicia Faba) Seeds2015 •
The aim of the work was to determine the effect of faba bean varieties and plant protection method on their yield of seeds and protein, chemical composition, in vitro true digestibility (IVTD) and nutritive value for ruminant feeding. The study was carried out on four cultivars of faba beans grown in similar environmental conditions in a two-factorial field experiment. The variation between cultivars, modified by the plant protection method, in chemical composition and IVTD of seeds may suggest that there would be a need to estimate its real nutritive value used for diet formulation instead of one common value for faba bean species read from feed tables. It was shown that lowtannin varieties are characterized by slightly higher CP and lower NDF content and significantly (P<0.01) higher IVTD digestibility compared to traditional or terminal inflorescence varieties. Faba beans (Vicia faba L.) are the third most important legume after soya (Glycine max) and pea (Pisum sativum). Similar to other legumes, it contains high amount of lysine rich protein (one of the essential amino acids), carbohydrates and other essential micronutrients. It can also be entitled as the cheapest source of protein. Although, comparatively it has a higher shelf life, but this legume is highly underutilized due to the omni-presence of antinutritional factors (ANF's) like protease inhibitors, amylase inhibitors, lectins, convicine and vicine, etc. Though, the amino acid profile is not complete, but other foods such as cereals and legumes can be used as complementary to each other. Due to presence of these ANF's, harmful effects are observed after its raw ingestion, overshadowing the nutritional aspects. Recent advancements in food technology like extrusion, microwave heating, fortification, extrusion, fermentation, bioprocessing, etc. along with traditional methods have given positive results, allowing human consumption and inclusion of faba beans in various novel food products. The functional characteristics of bioactive compounds, the nutritional characteristics and the results obtained after application of the above stated food processing techniques have been properly discussed in this article.

Comparative evaluation of the effect of boiling and autoclaving of legume grains on tannin concentrationThe study was designed to evaluate the effect of boiling and microwave treatment methods on reducing the concentration of tannins in Soy bean (Sb), Cowpea (Cp) and Pigeon pea (Pg) legume grains (LGs). The raw samples of LGs were roasted in a microwave oven for 3 and 6 minutes at 120 Three (3) LG seeds weighing 30 gms were boiled for 30 and 60 minutes in water at 100 oC. Meals of Raw, boiled and microwaved Sb, Pp and Cp LGs were subjected to proximate analysis for levels of tannins using the Folin-Ciocalteu assay technique. Absorbance for each sample as indicator of tannin concentration was read from UV-VSI spectrophotometer. Tannic acid levels in micrograms for the three (3) samples were read from the standard curve and the tannin content was calculated as on dry matter basis. Raw samples showed no significant (p<0.01) difference in tannin content in Sb, Cp and Pp. Boiling the LGs in water for 30 minutes resulted in the reduction of tannin up to 46.6% Sb, 53.5% Pp and 42.5% Cp. B...
1 The present study was carried out to investigate the proximate composition, mineral content, protein fractions, in vitro protein digestibility, and antinutritional factors (polyphenol,tannin, and phytic acid contents)of two newly developed faba bean (Vicia faba L.) seed flours (Hud-line 1 and Base line 11. Significant (p < 0.05) variations existed between two introduced lines with respect to their crude protein, ash, and carbohydrate. Both seed flour samples contained considerable amounts of P, Ca, Mg, K, Na, and Fe which made them potentials for future food supplements. No significant (p < 0.05) differences was observed in Fe content. Significant (p < 0.05) differences were observed in all protein fractions. Bas-line have significantly (p < 0.05) higher protein digestibility with lower tannin, polyphenol, and phytic acid contents compared to hud-line 11.
