Tabasco (Capsicum frutescens)

These chili peppers originate from Mexico and are best known for being the main ingredient of Tabasco sauce. The small fruits rate from 30,000-50,000 SHU. They are the only chili peppers to be juicy instead of dry on the inside. The peppers start out green and ripen to orange and then eventually red. They also remain upright instead of drooping after ripening. It takes about 80 days after germination to mature.

Planting/Harvesting Notes

  • Plant in full sun and well draining soil
  • Space plants 18 to 24 inches apart
  • Matures in 85-100 days

Seed Saving

To save seed, allow the pepper to turn red on the plant, then harvest, cut the pepper, scrape out the seeds and dry on a flat surface such as a screen, paper plate or baking sheet. Allow to dry for 1-2 weeks and then store in a paper envelope.
